Meal of the Day: Spinach Spaghetti and Turkey Meatballs

Dinner tonight was Tinkyada Spinach Spaghetti with homemade turkey meatballs.  It was delicious and fairly easy to make.



This, being the first time we'd made meatballs, we just kind of winged it!

Turkey Meatballs:

1 lb ground turkey
1/2 green pepper, finely minced
1/2 medium onion, finely minced
generous pinch of dried basil
generous pinch of dried oregano
~1/4 cup of freshly grated parmersan cheese

Preheat oven to 400. Saute the green pepper and onion with a little bit of olive oil until soft.  Add all ingredients together and mix.  Form into meatballs and bake for 20-25 minutes.



We cooked the Tinkyada Spinach Spaghetti according to the directions threw a couple of meatballs on top, added some dressed up jarred sauce (jarred sauce, granulated garlic, basil, oregano, red pepper flakes), and top it with more parm. The only thing I would do differently next time is to add some minced garlic when we saute the peppers and onions to add a bit more flavor.
